Vegan Apple Streusel Muffins #WIAW No. 11

Jenn says you can't judge me. So I'm counting on that. :) Since I'm not feeling well with my insomnia and migraines out of control I've not been eating well. Which is counter productive to fixing the problem. Do you know what else is counter productive? Staring at the computer screen. Which I'm not supposed to do. The doctor doesn't want me on the computer after work right now. Can you see how well I'm doing? Hey, no post yesterday.

I've also been super, duper busy so no pictures. Boo! I've got to do something about the pictures. More photography tips please!




Breakfast: Granola bar (gasp, I was running late and missed making my smoothie. Must have smoothie). Lunch: found some baked beans in the lunch room, picked out the bacon. They required bbq chips. Hey, I don't make up these food rules. Maybe I do. Dinner: Chicken (which I put BBQ sauce on, I couldn't control myself) and potatoes. Admission: I had soda today.




Vegan Apple Stresuel Muffins




Prep Time: 25 minutes
Cook Time: 30 minutes
Servings: 6

Ingredients

Streusel Topping
  • ⅓ cup old fashioned oats
  • ¼ cup whole wheat pastry flour
  • ¼ cup firmly packed brown sugar
  • 1 tsp. ground cinnamon
  • 4 tablespoons vegan butter
  • ¼ cup almonds

Batter
  • 1 cup whole wheat pastry flour
  • ¼ cup coconut flour
  • 1 cup old fashioned oats
  • ½ cup firmly packed brown sugar
  • 2 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ½ teaspoon. salt
  • 1 cup rice milk
  • 5 tablespoons vegan butter, melted
  • 1 flax egg (1 tablespoon flax powder + 2 tablespoons water)
  • 1 tsp. vanilla extract
  • 1 medium apple, peeled and finely chopped
Directions
  • Preheat oven to 325F (for dark non-stick pan).
  • Prepare flax egg by whisking 1 tablespoon flax powder with 2 tablespoons of water. Put in refrigerator until you need it
  • Spray olive oil on a 6-cup Texas Muffin Tin to grease
Streusel Topping:
  • Stir together oats, flour, brown sugar and cinnamon
  • Add in almonds
  • Add butter one tablespoon at a time and rub into mixture until it looks like granola
Batter:

  • Mix both flours, oats, brown sugar, baking powder, baking soda, cinnamon and salt in mixing bowl
  • Whisk together rice milk, vegan butter, flax egg and vanilla in separate bowl
  • Fold wet ingredients into dry ingredients until batter comes together
  • Add in apple pieces
  • Scoop into muffin cups (until about 2/3 full)
  • Top each with a heapingg tablespoon of streusel
  • Bake 30 minutes or until a toothpick inserted in center of muffin in middle of pan comes out clean
  • Let cool in pan 10 minutes
  • Unmold muffins onto a wire cooling rack
