Yes, I am up at 4:00 am blogging. Why? Hmmm.....1) because the hubs accidently woke me up and once I'm awake, I'm awake. 2) I wanted to put up a blog post and 3) because I made up this recipe yesterday and now if I don't write it down I'll totally forget it. So why not kill all three birds with one stone? You know, that's a horrible expression. Just saying.
I was inspired to make this recipe by Oxygen Magazine but when I went to make it I didn't have the ingredients on hand. As I was pulling out the things I did have and kicking myself for not having the other things, I looked in the fridge...and just went with it. It turned out yummy, flaky, and just a little sweet.
Tilapia with Kale, Tomatoes and Capers
Prep Time: 15 minutes
Cook Time: 12 minutes
Yield: 4 servings
Ingredients
2 tablespoons olive oil, divided
4 6oz. tilapia filletsSea salt and pepper, to taste
1/2 large red onion, chopped (or 1 small)
1 cup kale, ribs removed, coarsely chopped
3 Roma tomatoes, chopped
2 tablespoons capers
2 cloves garlic, minced
Directions
- Place 1 tablespoon of olive oil in a large non-stick skillet over medium-high heat. Add fish and season with salt and pepper and then cook until opaque throughout, about 4 to 6 minutes on each side.
- Once the fish is done cooking, place in s toaster oven on 200 to keep warm (alternatively, you can use two large pans and cook simultaneously).
- Cook brown rice as directed (I used Birds Eye Steamfresh select Brown Rice)
- Add the remaining tablespoon of olive oil to the skillet. Add kale and onion, cook for about 8 minutes, until tender.
- Stir in the tomato, capers and garlic and keep on heat until warmed through.
- Serve fish and tomato "sauce" over brown rice.
When I make it again, I think I'll double or even triple the kale. My husband thinks kale is gross so I was trying to be sneaking. He didn't even ask what the "green stuff" was just kept carrying on about how much he loved it. Maybe if I slowly increase the amount of kale over time he'll never notice. Yeah, I'm sneaky like that.
Now hopefully, I can get a quick nap in, do day 7 of 30 Day Shred, and then go to my mom's to spend the day with her and the girls. And, oh no, I haven't forgotten...somewhere in there I'm sneaking in a five mile run before midnight. Fearless!

That looks divine. I love kale. I still haven't fully restocked the house food-wise since being away on the cruise. Maybe today!
